I was amazed at how good it was! I substituted parsley for the thyme because we don’t care for thyme. I let it sit in the fridge 2 days before cooking because the only time I had to prep it was on Tuesday. I didn’t remember to check it after 1 hour, so I thought based on the temp. it would be very well done, but it was tender and moist. Everyone loved it!

Quick question…I covered the bird with plastic wrap by mistake and dried it off with paper towels just now…so it is now uncovered and planning to roast in a few hours..
will my turkey be ok? Should I do anything differently with roasting temp? etc?
