I used wheat orzo because it’s what I had on hand. My husband is vegan, so I used coconut milk instead of heavy cream, and plant-based parmesan cheese. He had three serving and said this is a must-make-again!

The orzo bulks up the chickpeas to make a very nice full meal with a salad and some crusty bread. I chopped up some baby Bella mushrooms and it was a great addition. This is also a terrific “from the pantry” dish that comes together in a snap.

My mom sent me this recipe because she liked it so much!
I used what I had in my kitchen, so substituted frozen spinach for fresh, dried basil for fresh, half and half for heavy cream, and used nooch instead of Parmesan. It came out great!! My partner – who usually needs a solid protein (tofu, tempeh, etc) for every meal found it filling and delicious – although he didn’t propose by the end of the meal ;(
Will definitely be making this again!
