Hi, I have been making this recipe for many years. Everyone I have made it for says it is “The best enchilada recipe ever” I agree. I don’t usually leave comments, but I wanted to thank you for sharing this recipe. Enchilada sauce is also fantastic.

The enchilada recipes look yummy and really easy to make. Thank you for all the tips and very detailed information as well. Looking forward to making this meal in the near future.

Too bland as is for the chicken mix, so I added some ground garlic, cumin, chili powder, and cayenne pepper. I added all this a little at a time and tasted it. When I reached the spice and heat level that we like it was perfect. When it was all put together with the sauce, I topped it with pepperjack cheese, slice jalapenos, and sliced black olives. Now that’s an enchilada!

I’ve been making this recipe for probably 5 years! Maybe a little longer, along with the enchilada sauce. It’s one of our fave recipes especially when we don’t know what to make! We almost always have all of these ingredients on hand.

I made these for dinner tonight and they were terrific! So delicious. I also made the enchilada sauce. I added some chipotle chili powder and it gave the sauce a nice kick.
These will be going into the regular rotation.

Easy weeknight meal. Favorite of the kids. I often make this when we have an extra kid for supper as it is always a win for the kids!

I don’t even know how many times I’ve made this recipe. My son-in-law (who is a professional chef) loves it. I always make extra so everyone can have leftovers for lunch. It’s a go-to recipe in our house!
