Made this tonight, and it was *Amazing*. Truly, the most time consuming part is dicing the garlic and ginger, but having those fresh flavors is essential, and isn’t *that* time consuming. Would recommend using Better Than Bouillon or something similar for the vegetable stock. It brings a real depth to the flavor. Also added just a pinch of red pepper flakes to the garlic and ginger. Gives it just a small bit of heat.

But this recipe is going to be a staple. Quick, easy, and cheap ingredients.

Unfortunately, I used my favorite potstickers and discovered while eating this soup that the amount sugar they slop into the meat stuffing is overwhelming. Blech! I never realized it before in all the years I’ve eaten them. Before I checked the package, I was trying to convince myself it was ginger, but alas. I want to love the dumpling as much as I love the soup! The package does not lie. What potstickers do you use for your soup?

I found some Pho broth at the store so used that but followed the rest of the recipe as written.
Hubby loved it as it was but I added some chili crunch for a little heat.
