I don’t see anyone serving it over polenta in the comments. I wonder why as this is the only way I’ve ever had it. Polenta is easy to make in the microwave. I’d highly recommend this.

I used 1.5lbs. boneless, skinless thighs + 2 boneless chicken breasts and white wine rather than red. I used my 8qt Le Creuset dutch oven to brown the chicken and then put everything in the pot and put the pot in a 250° oven for a couple of hours. I did temp the chicken to make sure it was 165° and then turned off the oven to hold it for about 30 minutes until we were ready to eat. I served this over egg noodles with parmesan and ripped basil sprinkled on top and an Italian green salad on the side. I haven’t made this in years but it was so good.

I can’t remember if I’ve ever eaten it out, so this may have been my first. The broth was insanely good: sweet with a little heat from the red pepper.

Stove top and one pot.

We used canned diced tomatoes “with basil, garlic & oregano”. I’m not sure how much that contributed to the sweetness.

Also added broccoli because why not.

I halved the recipe for the two of us and we both look forward to the leftovers. I got the burn message so it slowed everything down, but that doesn’t keep me from trying again.
