The amount of spiciness was intolerable and both, my husband and I, eat a lot of spicy food–including Mexican food, Thai, Indian, and so forth. We always add extra hot sauces and spiciness to everything. I don’t know what I did wrong. I used 2 Tbsp of curry, plus ginger, lemon. I used broccoli, carrots, and celery. I didn’t have any spinach, but I followed up all the measurements for stock and coconut milk. With much sorrow I will have to throw away the entire pot of food because I cannot fix it. I decided to cook this dish again but with chicken to see whether things change. Perhaps readers should limit the amount of red curry sauce to 1 tbsp?

I started out with 1 tablespoon of curry paste and ended up adding another half tablespoon of curry paste because I wanted a bit of a stronger flavor. The lime juice really brightens everything up. It’s a good thing to make ahead for a meal prep too. 😊

It was full of flavor and lots of healthy vegetables. I used 16 ounces of Bibigo frozen chicken and vegetable potstickers. I also added more red curry paste to make the soup spicier. It was delicious! I had a ton of leftovers as I’m an empty nester now. Next time, I’ll use only enough potstickers to make a single portion of soup for myself and duplicate for reheated portions. I found that the potstickers became a little mushy when reheating from the original batch. Thank you!
