This is the perfect recipe to fit the bill! My only suggestion is make the farro the day before bc it melts the goat cheese so easily if it’s even a whisper of still being warm. If wanting this for meal prep purposes, I suggest mixing the arugula, shallots, dates, and goat cheese and storing them in single portion glass containers. Toast the nuts but keep them separate. Make the dressing and farro, storing each of those separately too. The day you want to eat each portion, add farro to the salad mixture along with chopped pears. Pack the nuts and dressing to mix together when you’re ready to eat. I think this method allows each ingredient to be optimally fresh. Thanks for posting!

I used what I had. Walnuts instead of pecans, no farro in store so used orzo. Definitely could add additional protein to make a main meal for hearty appetites.
